Pork Chops and Veg

One of the best things in life is food. My social life revolves around eating. If I want to meet up with friends, we meet for lunch or dinner. When I have friends over at my house, I love cooking them dinner, or cooking with them. Cooking is a therapeutic hobby. Whether I am following a recipe or just improvising, being in the kitchen automatically relaxes me.

This week, I tried to cook a lot of food so I could freeze some meals and have ready-made-meals. Along with my attempts at improving my health, I would also like to improve the health of my bank account. I decided to buy a few things on sale at the store, and pork chops were part of the deal. At ASDA, they have the “buy 3 for £10” deal on meat. I bought chicken breasts, lamb chops and pork chops. I’ve never cooked pork before, so I thought I’d give it a try. The pork chops and veg turned out absolutely amazing!

I salted the pork chops on both sides, and rubbed harissa paste on each side. I placed all 6 chops in the casserole dish and preheated the oven at 200.

Meanwhile, I chopped the veggies I wanted to use. I had mushrooms, an orange bell pepper, 1 leek, tomatoes, courgettes (zucchini), 1 red onion, can of chick peas (garbanzo), pre-chopped garlic and I also added some stuffed Spanish olives. When the oven reached the temperature, I put in the pork chops for 5 minutes. After 5 minutes, I took them out, and turned them to the other side and repeated for another 5 minutes.

After the other side was cooked, I took the pork chops and placed them on the side. You’ll finish cooking them at the end with the rest of the veggies. I took the vegetables and put them in the casserole dish (with the oils from the pork). I added olive oil, salt, pepper, rosemary and basil and stirred everything so that it was evenly coated.

After prepping the vegetables, I put them in the oven for 20 minutes without the pork chops.

When 20 minutes were up, I took out the casserole dish and placed the 6 pork chops on top of the vegetables for a final 10 minutes of cooking.

After the 10 minutes, I took it out of the oven, and was ready for dinner! I had two pieces that night and saved the rest in the fridge and freezer. I was extra hungry that night, but 1 pork chop fills me up just fine on a regular night, so this, in theory, could serve as 6 meals.
